U.S. New Technology Improves Vitamin C Content

A research group at the University of California, USA, found that the use of transgenic technology to produce large amounts of DHAR enzyme in crops can significantly increase the vitamin C content in grains such as corn. The study found that, in crops, the recycling of vitamin C is mainly controlled by DHAR enzyme, which can make vitamin C reuse in crops. In the absence of this enzyme, vitamin C in crops will be quickly lost. Researchers speculate that if more DHAR enzymes are produced in crops, the content of vitamin C may increase accordingly. The research team isolated the gene coding for DHAR enzyme from wheat and transcribed the gene in maize. As a result, the content of corn DHAR enzyme increased by up to 100 times.
